Marriott International, Inc.’s signature Cantonese restaurant Man Ho finally opens its doors in Manila with the esteemed chef Law Wui Wing at its helm. Since the chef’s arrival in the hotel in 2014, it has been hosting lavish Chinese banquets for guests. With the significant increase in demand for authentic Chinese dishes, the management led by Marriott Hotel Manila General Manager Bruce Winton thought of bringing Marriott’s signature Cantonese restaurant in the country. Man Ho first opened in JW Marriott Hong Kong and has been adopted by other Marriott hotels around the world.

Man Ho’s high ceilings, elegant interiors of light earth tones accented by intricate ornaments reminiscent of its respective Chinese dynasties, floor-to-ceiling windows with a lush view of the golf course, and its captivating wall with embroidered cherry blossom design, all make up an enticing dining ambience for couples, families, business groups, and friends. It has a total of 140 seats and features six private dining rooms that can hold from six to 24 persons. Two of its private dining rooms may also be combined for a larger banquet.

Since December 2016, Man Ho has been serving guests lunch and dinner á la carte. Diners may choose familiar Cantonese favourites such as fried rice with chicken and salted fish, beef fillet and black fungus with ginger and leeks, sautéed porcini mushrooms, braised seafood soup with caviar, and deep fried boneless chicken in “Japanese style”, among others.

Chef Law also invites guests to try Man Ho’s signature specialities like the deep fried curd with spicy salt, marinated fungus with black vinegar, the smoked duck breast with mango, and the ever popular roasted Peking duck with Chinese pancakes. With Chef Law being behind the success of Shanghai Marriott Hotel City Centre’s Man Ho, which for three consecutive years consistently made it to the Top 10 Cantonese Restaurants of Shanghai Modern Weekly, there is no doubt that that of Marriott Hotel Manila will also reach greater heights.

Its scrumptious dishes’ excellent quality may be traced to Chef Law’s meticulousness ehen it comes to the freshness of the ingredients and his eye for detail. He imports many of the seafood such as the king prawns and crabs from Hong Kong and on his days off, he visits Chinatown in Metro Manila to check what’s available like almonds for his authentic almond cream dessert. Pigeons and suckling pigs are imported from China—the pigs specifically from Hunan province where pigs of excellent quality are raised.

During its preview for the members of the press, what impressed us most was Man Ho’s signature roast goose with plum sauce that was surprisingly crispy and tender with a burst of flavours. “We stuff the goose with Chinese herbs then we put it in front of a fan for about 10 hours so that the skin will be very dry before we put it in the oven,” he shared.

Diners are also invited to try Man Ho’s dim sum specialities prepared by Du Wen Bo, a specially trained chef that previously worked at Beijing Marriott Hotel City Wall and was a well-known dim sum chef. The dumplings are cooked only upon order and are served steaming hot with chilli bean sauce.

Man Ho is located in the newly-constructed Marriott West Wing that is connected to the Main Hotel and the Marriott Grand Ballroom.
