Exquisite flavours and fine pours abound at the Confrerie de la Chaine des Rotisseurs Baillage de Manille’s 46th Intronisation and Grand Diner Amical held at the Makati Shangri-La, Manila. La Chaine des Rotisseurs is the oldest and most prestigious international gastronomic society devoted to the promotion of fine dining and the camaraderie and pleasures of the table. There are members in more than 100 countries worldwide.

An esteemed roster of members and guests arrived in style the Gallery of the Makati Shangri-La, Manila at cocktail hour, which was followed by the solemn intronisation of both new and promoted members. Present during the intimate dinner were Freddie and Josephine Borromeo, Michel and Amparito Lhuillier, Consul Mellie and Luis Ablaza, Consul Helen and Marian Ong, Jaime Laya, Diether Ocampo, Cathy Valencia, and Vanessa Suatengco, among others.

Dubbed as The Night of Wines and Roses,” the night’s highlight was a lavish dinner served amidst a backdrop of towering red roses. Masterfully created by the Executive Chef Nicola Canuti, the feast started with refreshing octopus with Tuscany beans, carpaccio of red prawns, Calvisius Oscietra caviar and soothing lobster consommé, black cod, baby squid, and saffron potatoes—both were complemented by Lhuillier Champagne Rose NV.

The luscious duck ravioli with parmesan cheese, and the succulent beef tagliata with Sicilian caponata paired with Les Terres de Cistelles Chablis Premier Cru Fourchaume 2014 and Fonterutoli Chianti Classico 2015, respectively. The piece de resistance was the Brie cheese, mascarpone and truffle herbs salad, which came in bursting with flavours, even more so with a glass of Luccarelli Il Bacca Old Vine Primitivo di Manduria 2015. Dessert was kept simple yet refreshing with the raspberry meringata with cheesecake ice cream. Capped the night with bourbon and amaretto, and the usual freshly brewed coffee and a fine selection of tea.
