Drink to sophistication with award-winning Manny O. Wines at Ibiza Beach Club

The region’s premiere venue for lifestyle dining and entertainment not only gives its guests a nightly showcase of world-class Cebu talents, it also brings to the table a range of award-winning wines blended by Filipino entrepreneur, Manny O.

Aptly named after its creator, Manny O. Wines features several blends namely, Bibulus, Sumillier, Discipulus Blanc, Discipulus Syrah, Agapitos Branco, Agapitos Rose, and Celebrus. Collectively, they have garnered over 238 awards in 44 counties including France, the United Kingdom, Spain, Germany, USA and Hong Kong, to name a few. In these events, the wines were rated and reviewed through blind tasting.

This award-winning series is one of the highlights of Ibiza Beach Club’s beverage menu. Each blend has its own story and character, which makes the wines perfect to pair with a variety of dishes offered at the restaurant.

Aged for twelve months in American oak barriques, the Bibulus has a brilliant intense colour with a deep ruby tint. In the mouth, it has a soft and appealing balance of new wood and ripe berry aromas, a kiss of licorice, vanilla and pain grille, silky tannins, and a multi-layered finish that lasts.

From a single varietal, Sumiller is from the Monastrell vines of the Yecla region of South Eastern Spain, not far from the Mediterranean coast. This wine pairs well with Spanish food and grilled meats.

Discipulus Blanc is an elegant vintage white wine handcrafted in the Languedoc region, South of France. It is both refreshing and fragrant, suggesting white flowers and citrus — refreshing on the nose, and hints at butterscotch and toffee — and warm and creamy in the mid-palate too.

From the South of France in the Languedoc region, the Discipulus Syrah varietal is cooled by the evening breeze from the Mediterranean and equally ripened by the warm daylight on the stony soils on the windswept hills of the coast. The effect is a fragrant and lively aroma on the nose.

The Agapitos Rose is an enthralling blend of Aragonez, Alfrochiero and Castelo varietals. This blend delivers a bouquet of tutti fruity candies with lively aromas, suggesting fresh raspberries, cranberries and cherries with hints of roses. Crisp and refreshing on the palate extending to the finish.

The Agapitos Branco is a tasteful and well-balanced white, perfect for those special moments at the table. Its refreshing soft acidity integrates nicely with a satin-like palate. It is made from Portugal's exotic Antao Vaz, Roupeiro and Perrum varietals.

Celebrus is an all-time favourite among diners. It is the only one that sparkles among all Manny O. blends. Its fino bubbles stay creamy on the tongue and you will find none of the sharpness sticking around the mouth. In the absence of an edge is a delicate fizz. Its flavour is like that of an overripe pineapple, notes of apricots and peach with floral aromas.
