Wine and a good time are two things you can always expect from Barcino, and their very first sherry tasting embodied just that
To give us a taste of Spanish living, last 10 February 2020, Barcino Santolan Plaza held their very first Sherry Night. The restaurant welcomed González Byass’ Master Blender Antonio Flores, deemed the Best Winemaker of Fortified Wines in the World according to the Winemaker of the Year Awards. He, along with Regional Sales Director in Asia Pacific Xavier Tamames to help with the translation, led a discussion on sherry and how to pair it with different types of tapas.
“Sherry wines have the most diverse range, more than any other category of wine in the world,” Antonio said. “We go from the driest wines, like fino sherry, to the sweetest, like Pedro Jimenez. There’s always a sherry for any palette. You can pair it with any kind of food or flavour.”
Guests sampled seven types of sherries coupled with specific tapas, pairings that would help bring out the flavours of each sherry. For example, Tio Pepe Dry Sherry brought out the briny flavours of the Barcino’s Sardinas Montadito, an Alfonso Oloroso paired well with a selection of cold cuts and cheeses, and a very sweet Solera 1847 Cream went well with the assorted fruits (but would also pair well with a rich, chocolate dessert).
