Davao sure is known for its exotic fruits and fantastic chocolates... but soon it'll pride itself in some glorious bread and magnificent breakfast meals too! Chef-owner Wade Watson gives us a sneak peek on the soon-to-open brunch spot in the south, Bramble

Brunch is yet to secure a firm spot in the Filipino dining scene, but we definitely are head over heels for some good, fragrant, buttery, bread and pastries. So it sure got us giddy to hear a new bakehouse rising in Mindanao that will serve not only delightful baked goods but mouthwatering brunch items as well.

A brainchild of Bondi and Bourke's owner, Wade Watson wanted to offer something different from the current pastries in the market. As a result of much travelling across Europe, and of course, being heavily influenced by Austrialian cusine—being an Aussie himself, Wade hoped to bring a fresh concept boasting bread and pastries.

At Bramble, a wide range of pastries are to greet diners, from finger buns, vanilla slice, stuffed doughnuts, hot cross buns, and croissants that are meant to sweep you off your feet. Food fiends are also sure to enjoy the bakery's savoury items: Turkish inspired pizzas, sausage rolls, Cornish pasties, Australian Pies, and bagel sandwiches you'd want to put a ring on.

Of course, we can't talk about breakfast and not mention waffles! A calorific selection of their salty and sweet waffles could just be your next go-to breakfast item. Meanwhile, a much healthier option is their colorful Acai bowls—pitaya, mermaid, and good old Acai. But if you're in the mood for a hearty meal, you can indulge in their Tri-colour quinoa Buddha bowl with harissa chicken, roasted vegetable, and organic watercress instead.

"We look forward to offering a complete à la carte menu with innovative Australian brunch/lunch and dinner fare all day everyday.  [Including] pastries, cakes, cookies and all the traditional and not so traditional," said Wade. "The menu is largely Australian, but in this day and age, we will most certainly pull from the French, Germans, English, and even the Americas, but more Australian, and yes, we will be baking some local favourites."

Matching their fun and eclectic menu is the store's pink motif. The blush-coloured exterior gives off a welcoming, young vibe. The interior is as hip, with wooden plank tables and graphic wallpapers and tiles.

"We have just set out to provide a comfortable space for all guests and patrons to relax, eat affordable fare in a nice casual environment—bright, warm lit interiors. Vibrant colours are far from our other concepts, but I must say it works and works well," said Wade.

Bramble is set to open on July 6 and is located at 115 P. Pelayo Street, Poblacion District, Davao City, Davao del Sur
