The Peninsula Manila’s iconic signature restaurant Old Manila will spotlight two legendary French purveyors of luxury comestibles – premium Champagne Drappier and top-shelf Ossetra caviar from Kaviari – at a six-course Champagne and caviar dinner on April 10, 2019.

During the one-night-only dinner, Old Manila Chef de Cuisine Allan Briones will create an indulgent six-course degustation menu that will give guests an opportunity to sample an array of memorable ossetra caviar-driven dishes that will also showcase Champagne Drappier’s distinctive use of the pinot noir grape variety from the Aube region of France.

The six-course dinner menu starts with Welcome Canapés (triple-cooked chips, aioli, caviar, tuna tartare, avocado, tobiko, blinis, crème fraiche, keta caviar) and Suriol Azimut Cava. For the first course and second course, guests will indulge in French Veal & Tuna Tartare and Vichyssoise, both are partnered with Drappier Carte d’Or Brut. Continuing the auspicious dinner are Sous Vide White Asparagus, Seared Japanese A5 Wagyu, both served with Drappier Brut Nature Zero Dosage Pinot Noir. Brillat Savarin Cheese and Champagne Parfait both partnered with Drappier Premier Cru cap off the lovely meal.
