Culinary powerhouse, Margarita Forés, launches her first ever culinary travel show, Harvest with Margarita Forés. The four part series aires on February 18 at 7PM on CNN Philippines.

“It was a priceless opportunity to travel around my own country and discover not just new ingredients and ways of cooking, but to be able to really interact with the people and the farmers. They are the stakeholders who are connected to the products that we are there to learn about. I love to learn about new ways to handle produce. I learned about myself as I had to think about how to put my own take on these rich traditional dishes. They taught me skills that I can use in my everyday work too!” – Margarita Forés

In each episode, chef Forés cooks up spectacular dishes with only the native ingredients available to her on location. She learns from the locals and then in turn, on the spot, shows them her own take on their traditional food. The people in each area that chef Fores visited, immersed her in their way of life; they exposed her to their traditions, livelihood crafts and shared who they are with her. “I learn so much about culture and history of our nation. It is great to highlight the talent of our local craftsmen. I learned about how they grade the fish, tuna, at the market and how they value ingredients.” – Margarita Forés

I asked Forés if the show challenged her as a chef and she excitedly replied saying “Definitely!! The dish in every episode is impromptu; there is never a plan! It is always what comes to me then on the spot because it all depends on what ingredient is available to me at that moment. When what I need is not there I have to become a sponge and learn new ways to utilize ingredients, use new skills and improvise. It is a lot of fun to challenge myself and play with flavours.”
