Where To Eat: Metronome Is T.Dining's Best New Restaurant in the Philippines This 2020
French cuisine has always faced tough culinary crowd in the Philippines. But we bet your bottom dollar that this rare gem is staying put. As restaurateur and Metronome co-proprietor Elbert Cuenca put it, “More often than not, when someone hears the word ‘French,’ they expect it to be serious, formal, fine...heavy. We’re breaking these expectations and giving you something different, more special.”
Taking on the challenge with Cuenca are Joël Robuchon- trained chef de cuisine, Miko Calo, Alain Borgers (the former GM of Makati Shangri-La), and branding whiz, RJ Galang. Instead of formal-course dining, here, one can expect a well thought out progression of ingredient- driven rather than concept-driven dishes curated and calibrated by Calo, allowing diners to create a degustation for themselves. Further augmenting the delightful savoire-faire is a tightly curated wine list. Building on the memorable Metronome experience are the bright and crisp interiors brilliantly executed by Noel Bernardo.
