Big, bold flavours reminiscent of the famed pizzerias of New York await diners at the latest addition to Crimson's roster of restaurants
Crimson Filinvest City is set to change the dining landscape in the southern suburbs of Manila through Firehouse Pizza, the latest addition to its already excellent selection of restaurants.
A pizzeria with a difference, Firehouse's menu plays riffs on the robust and hearty fare served at New York's iconic Italian-American restaurants with a satisfyingly elegant twist.
Since it opened last 22nd October 2019, the restaurant has been welcoming guests for lunch and dinner and has been serving up good food and fine drinks in a convivial setting.
Here, one can order from a savory selection of both classic and signature pizzas, each made on a sturdy sourdough base loaded with top quality ingredients ranging from authentic Italian cheeses to fresh produce and excellent meats.
The signature menu includes original creations like the Firehouse which pairs prosciutto and arugula with piquant peppers; the rich-tasting Times Square with its mix of sausage, eggs, and artichokes; and the pure luxury of vodka-cured salmon on the Garish Gravlax. Rather than the regular mozzarella that is the default topping for most pizzas, guests here can opt to swap in any of five premium cheeses: buffalo mozzarella, fior di latte, scamorza, chili bocconcini, and burrata.
The technique for the dough involves 48 hours of controlled fermentation in order to ensure the right balance of crispness and chewiness in the final product, along with a delectably nutty taste with an agreeable tang. This was developed in-house by Crimson Filinvest City executive chef Del Adoria and executive pastry chef Benjamin Bourgeois. The flavours for Firehouse's signature line were created by Adoria with input from Crimson Filinvest City’s general manager Gerhard Doll.
