Discovery Primea finally opens its elegant dining space to the public, bringing a unique harmony of modern European cuisine and Asian flavours that will surprise even the most sophisticated palates.

Manila’s fine dining scene is about to change as the newest dining destination in Manila opens high atop the Makati skyline. Discovery Primea’s Flame takes its inspiration from the hotel team’s burning passion and desire to create new experiences through food. The executive chef Luis Chikiamco shared that “at Flame, we are pushing modern European cuisine and Asian combinations in bold, intriguing directions.” 

With the intention of both surprising and delighting, familiar dishes are seared, grilled, torched from the Josper Oven and served with delightful twists along with the widest selection of homemade mustards and dressings created through cold infusion. Even the everyday, becomes a special treat in offerings such as ‘quezo de bola and hamon’, inspired by the great Massimo Bottura, seared Chilean sea bass with shiitake mushrooms, garlic confit, Madeira-mushroom broth, and braised U.S. short ribs atop creamy celeriac puree and ginger tamarind sauce.

Other stand-out dishes from the menu include the Asian beef carpaccio with fresh arugula, wasabi nuts, sriracha and soy vinaigrette, the pan seared foie gras with grilled eggplant, pickled pears, nori flakes, teriyaki glaze and roasted Scottish salmon with braised savoy cabbage, Japanese pickled ginger and aromatic sesame sauce, a sure delight to the palate.
