Less commonly found but just as delicious as its Singapore counterpart, KL-style Hokkien mee is a severely underrated dish that’s often overlooked by hungry patrons spoilt for choice at Singapore’s varied zi char restaurants.

The Singaporean version often features yellow noodles a mix of yellow and vermicelli noodles (or bee hoon), which is then wok-fried with lard, pork, prawns and squid with a deeply umami prawn stock to make a smooth, almost creamy sauce. The Malaysian version, however, features thick-cut noodles cooked with lard, pork belly, and prawns, then tossed in luscious dark soy sauce over a raging charcoal fire. Both dishes are deeply savoury and perfumed with wok hei, or smoky, charred flavour, albeit with vastly different flavours and textures.

1. Hong Lai Hokkien Mee

“My favourite KL-style Hokkien mee is from Hong Lai Restaurant in Setapak, Kuala Lumpur, which has been serving the dish since 1987. They have recently opened a branch in Eatalley Food Court at Orchard Gateway. The Hokkien mee is fried using traditional charcoal fire, which brings out a fragrant wok hei flavour. The noodles' springy texture, combined with the rich charred flavours, evokes a sense of nostalgia for me.”

3. Food R Us

"My absolute favourite KL-style Hokkien Mee is from a restaurant at Queen's Road. The restaurant "Food R Us" serves their noodles with a thick and richly flavoured gravy along with noodles that are cooked to perfection. Their style of Hokkien Mee is drier as compared to the other stores in Singapore—an approach which I much prefer. 

A word of warning: be prepared for a full house, especially during peak hours."

"Food R Us is really close to our restaurant at Portsdown and ever since a regular guest bought it for us during lockdown, Jonathan and I have absolutely loved it. We love how the noodles remain springy even when packed to go, and also deliver the right amount of wok hei. Most of the time when noodles are cooked in dark soy sauce, they have a tendency to be overly sweet, but this version has a good ratio of sweetness to savouriness, thanks to the great balance of sauce and sambal. This is a dish we can wolf down in seconds without feeling too jelak (sick of it).”

4. Chef Kang’s Private Kitchen

"Hands down, Chef Kang's Hokkien mee has to be the best in Singapore. Hear me out. Yes, it was a one-Michelin-star restaurant, there are only five tables, and it has air-conditioned private rooms, but don't be fooled by all of these! Good Hokkien mee doesn't have to be made with charcoal fuel in an open air kitchen. 

Chef Kang's art of mastering the high pressure stove is mesmerising. He knows at which point to fully blast the wok so that the tender pork slices stay juicy, and when to  soften the touch so that the garlic doesn't get burnt. With one wok, he cooks the garnishes separately, then blanches the noodles to get rid of the alkaline note that usually comes with KL-style thick noodles. After that, the garlic and sauces are added, and the next thing you know, everything is in full blast to get the most out of the wok hei.”
