A unique and exciting blend of French and Mexican flavours comes to life through a delectable five-course dinner on March 10, 11, and 12. Mexico-native Chef Beatriz, who has made France her second home, takes the kitchen reins as well as Manila’s epicures on a gastronomic journey that showcases her bold and creative culinary techniques. The exclusive dinner is priced at Php 4,700 per person. Guests may also add Php 1,300 for wine pairings.

After learning the ropes at the Paul Bocuse Institute, Beatriz Gonzalez began her career in Michelin-starred restaurant La Belle Otero, now known as Carlton, in Cannes before joining the famous Lyonnais Pierre Orsi. She continued her culinary journey in Mexico and Italy until she made her return to France where she became the Deputy Chef of La Grande Cascade. After being under the tutelage of renowned chefs, Beatriz brought forward her talent and introduced her own flavours to the world as she set up her own restaurants, Néva Cuisine and Coretta. As her modern establishments are met with great success, Chef Beatriz continuously breaks new ground and shows she is shaking the dining industry through her distinct taste and culinary prowess.

The exquisite five-course menu features A Garden of Flowers which is a dome of seabram ceviche, leche de tigre, confit lime emulsion adorned with fresh flowers; Australian braised oxtail ravioli topped with an espuma of Mexican molé verde; roasted Mediterrenean seabass, smoked beetroot with mushroom and beef jus; seared French duck breast, thinly sliced pressed potatoes with fresh wasabi and shallot on the side. The Mezcal interval serves as a Mexican-style palate cleanser. The exquisite dinner is capped with Pavlova mango with extra virgin olive oil sprinkled with taget.
