With Chef Manny Sia at the kitchen’s helm, Kutxara brings another delightful preview of their upcoming menu in a pop-up at Bar Pintxos Salcedo last June 29.

Kutxara is the latest concept by the men behind Bar Pintxos and La Cabrera. At the moment, they are testing out menu options in a series of pop-ups where they gather dining enthusiasts to get feedback on which dishes they loved best and what needed improvement. The menu features Spanish dishes with a unique Asian twist.

Above Arroz de Cangrejo

What made it in the menu for the past three previews was the delectable Arroz de Cangrejo, an arroz dish with aligue, crab meat, seaweed emulsion, and tobiko. For most guests that night, it was the most memorable and sought after dish. When asked where he got his inspiration for the particular dish, chef Sia shared “For me, what is much better than paella is the arroz of the Spaniards. Among all the different flavours of the arroz, the best ones are the seafood types.” Having lived and trained in Barcelona, the chef brings authentic flavours with extraordinary techniques from the Spanish culinary scene. Sia shared that his training in Barcelona was really centered on molecular gastronomy, and it was actually here in the Philippines that he learned and developed his skill in Spanish dishes.
