Acclaimed Michelin star Chef Guillamo Roget of La Brouillarte in Saint-Jean-de-Luz, France showcases a magnificent culinary experience at Raffles Makati’s dining destination — Mireio, from 27 to 29 November at 6:30 pm.

Inspired by the flavours of southern France and Spain, the delectable five-course dinner is paired with fine wines exclusively for three nights only. Gourmet and food connoisseurs may delight in this tasteful evening affair at Php 6,800 per person.

Guillaume Roget began his career as a sommelier for acclaimed Michelin-starred restaurants such as Ruffet, Le Mas de Candie, and Les Freres Ibarbour. He traded in his decanter for a Michelin Star when he discovered his love for cooking. Guided by his passion for the craft, the chef acquired his experiences all by himself. He also draws inspiration from his Basques-Souletines roots paired with his mastery of wine.

Chef Guillaume takes Manila’s epicures on a gastronomic journey that celebrates his inventive and uninhibited culinary philosophy. The season-inspired five-course menu features torched rare and wild New Caledonian blue prawn, broccoli emulsion, mushroom and pine nut broth; pan-seared French foie gras, chestnut and lemon verbena-scented Jerusalem artichoke purée; grilled sea bass, chorizo Iberico enhanced razor clams, crunchy cauliflower risotto; Australian Wagyu beef tenderloin celeriac confit, sweet onion foam, Périgord black truffle; and Chef Roget’s coffee and chocolate “conception”. Fine wines will complement this delectable line-up of dishes.
