What pairs well with a glass of tequila? Two of Manila's best chefs give us a mouthwatering menu of choices that infuse food with the best of Patrón

Let's face it: finding our perfect match can be difficult. Fortunately, in the world of gastronomy, it's not quite so hard—especially when you have professional chefs by your side. Though not a fantastic cook myself, I was able to enjoy a delicious meal from Kampai right in my very own home.

#SimplyPerfect Pairing

DIY food kits are nothing new, yet there's something special about the #SimplyPerfect food pairings Patrón had made in collaboration with chefs Mikel Zaguirre and Edward Bugia. Each kit comes with a full bottle of Patrón tequila, as well as all the necessary ingredients needed to recreate a chef-approved recipe.

Tatler Phliippines was privileged to sample chef Mikel Zaguirre's Patrón scallop udon alongside a refreshing glass of tequila mixed with ginger ale. The noodle dish was composed of Naruto udon tossed with seafood (kani and generous US oysters), bacon, sesame oil, spring onion, and chilis. Its mild flavour paired beautifully with the refreshing tipple to create a perfectly balanced meal.

"Patrón pairs well with the special scallop udon because it highlights its peppery and fruity notes. It doesn't overpower the dish nor the sipping drink," chef Mikel points out. Garnished with chilli flakes and tequila-infused butter, this Kampai-approved recipe is a no-fail way to enjoy restaurant food while still at home. "I made sure to make one special [recipe] for the folks that are just at home chilling," he says.

Those who prefer a heartier, more Filipino-style of meal may opt for chef Edward Bugia's fried chicken sisig. The kit comes prepared with a fried chicken fillet pre-marinated in calamansi and soy sauce. Smoky and sweet, it pairs beautifully with Patrón Añejo.

Dining Out 

We miss dining out as much as you do! So when you do pop out for a meal, look for more tequila pairings to help get you right in the mood for a good time.

Head to chef Edward's restaurant, Mimi & Bros which is best known for comfort food served at the heart of BGC. "We can offer our customers simply perfect Patrón tequila pairings that will elevate our dishes by accentuating the combinations of flavours that we put out," chef Edward explains. Their bagnet rice bowl (thrice cooked pork belly served atop a bed of rice and pickles) enjoys delectable companionship alongside the tanginess of a tequila cocktail shaken with lemon. 

Mimi & Bros also offers fish sauce caramel wings served that is also paired with a tequila tipple. Sweet tooths needn't feel left out either as the restaurant serves a fragrant mango flan with spiced kiamoy salt that best intermingles with the oakiness of the Patrón Añejo Old Fashioned.

Just a few kilometres away, in Poblacion, chef Mikel greets us with tasty Japanese offerings at Kampai. "When Patrón called and asked me if it was possible to do a campaign and pair tequila with local flavours and do it in one of the restaurants that I handle, it was a no brainer, I automatically said yes," chef Mikel recalls. "[I asked] when do we start experimenting?"

In his restaurant, curious diners are free to enjoy salmon "teppansilog" with tequila soy butter and garlic rice. This mouthwatering combination is further enjoyed with a Japanese tornado omelette on the side, and a glass of Tequila Mule in hand. 

Another must-try fusion offering is Kampai's tuna and watermelon, which has been cured in konbu for 24 hours and topped with ceviche vinegar infused with tequila. It is served alongside watermelon crusted with truffle salt that emphatically accentuates the agave flavour of the tequila. Oysters are also on the menu, best paired with Patrón Añejo. Of course, there's also a choice of a creamy udon pasta with uni, peanuts, and wasabi to go with something stronger like tequila on the rocks.

Lastly, an exciting take on Japanese yakitori, this time served with a tequila tonic. "Working with Patrón has allowed us at Kampai to explore how we can elevate dishes and bring out the flavours our customers keep coming back for,” chef Mikel says.
