Growing up eating Italian cuisine, Single Origin Osteria’s executive chef, Juan Barcos drew inspiration from his grandmother’s hearty cooking

A 3rd-generation cook whose family migrated from Italy, the chef drew from his childhood with memories spent devouring pasta, notably his nonna’s lasagna (“nonna” is Italian for grandmother). This sort of home-cooked traditional fare, along with the chef’s signature pizzas and a Bistecca alla Fiorentina are among the restaurant’s stand-out dishes when it opens early in 2019.
