He grew up on his Italian grandmother’s pasta, most notably her lasagna. When it came to opening Single Origin Osteria’s first branch in Makati’s Salcedo Village early in 2019, Chef Juan’s nonna (Italian for grandmother) was the obvious inspiration behind its menu.

When its new BGC location opened last December, his grandmother’s beloved home cooking offers a heartfelt welcome to the Taguig crowd. Besides artisan pastas and the chef’s signature pizzas, an Italian breakfast served from 7 am onwards is a stand-out at the new SO Osteria in One Bonifacio Mall. When a menu is this personal, it exceeds the label of “comfort food.” It is dining that ensures devotion, such as with a loved one.
