The traditional Baked Skin mooncake is an ode to the ancestral spirits that walked the earth and gave the delicacy its meaning and purpose. It has four varieties that have a double egg yolk center: the traditional red bean paste that’s light but doesn’t compromise the flavor nor its familiar texture; the delicate white lotus paste filling especially made with less sugar for a guilt-free treat; the creamy, eggy custard filled variation that glides through the taste buds, and surprisingly, does not have an overpowering egg flavor; and the pandan paste to wrap the delicate yellow gems resulting to a balanced union of sweet and salty medley in the mouth.

In recent years, the mooncake was reinvented to suit the changes and tastes of passing generations. The Snow Skin mooncakes have become a popular alternative especially for the young, who prefer a sweeter kind but do not want to steer too far from tradition. The Snow Skin exterior is made of a cooked glutinous flour that rivals the popular Japanese mochi’s addictive bite and is best kept chilled until it’s time to be consumed. There are 5 flavors to choose from, all of which use a selection of local flavors and texture: mango paste with dried mango, mung bean paste, strawberry and lotus paste with rum hazelnut chocolate, orange-colored snow skin mooncake filled with custard paste and bits of Palet Noir chocolate, and ube paste.
