Launching their latest offerings, Solaire Resort's Waterside Restobar offers Latin-inspired fare made with carefully selected and sourced ingredients from South America. In this exclusive interview with Waterside’s Chef de Cuisine, Chef Hylton Le Roux talks about the interesting similarities between Latin and Filipino cuisine and how that inspired him when creating Waterside's re-vamped menu.

  • The selection of tapas is quite extensive. It is perhaps best known for their black pepper pork ribs, the aji spiced calamares and the Iberico and Manchego croquettes. All these go well with a tall glass of Stella Artois—which is served on tap—or an Argentinean Malbec, their house pour.
  • Carnivores will have no shortage of steaks to choose from. The rib-eye is the staff’s choice. For sharing, the paella negra and the Valenciana, which has both seafood and meat, are popular choices.
  • Those seeking a healthier option should try the Peruvian chicken, which is cooked on the rotisserie and served with grilled corn and yucca fries.
