Gallery by Chele is making a move towards a more eco-conscious dining experience

As an addition to Gallery by Chele | AT HOME Spanish Signatures, this restaurant in Bonifacio Global City launched "Cooking Traditions", a new concept that uses local and sustainable produce on their takeaway and delivery menu. This is very exciting for the BGC-based restaurant because their philosophy and advocacy are for the conservation of the environment and to create dishes that are not only healthy for you but for nature as well.

With this new initiative, they are able to sustainably source seafood like nylon clams, mackerel and squid from different communities around the country together with Meliomar.ph. The nylon clams come from the province of Sorsogon, one of the major seafood points in the Philippines. The dishes are cooked in different ways based on traditional recipes by chef Chele González such as almejas en salsa verde, mackerel parilla (Josper grill oven), calamares en su tinta, and clam fideua (noodle paella).
